Vegan Lentil Curry
Ingredients
- 3/4 cup dry uncooked lentil, rinsed and drained
- 1 medium red onion, peeled and finely chopped
- 1 large red ripe tomato, chopped
- 2 large cloves garlic, peeled and grated
- 1 teaspoon coriander powder
- 3/4 teaspoon turmeric powder
- 3/4 teaspoon cumin powder
- 1/2 teaspoon red chili powder
- Salt, to taste
- 1 tablespoon olive oil
- 3 cups water, or more
- 2 tablespoons fresh cilantro, finely chopped
Directions
Heat olive oil in a stainless steel pot. Sauté onions in it until soft on medium heat. Add tomatoes and garlic to the pot, and cook it until soft.
Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt to it. Cook the spices with the vegetables for about 5 to 10 seconds. Add the rinsed and drained lentil to the pot and cook it for a minute. Pour water into the pot and bring it to a boil.
Reduce, cover and cook the lentils on simmer until it is soft while stirring occasionally. Add more water to the pot, if required. Stir in cilantro, and serve it hot!
